Cream butter and sugars. Add egg, beat well and then add banana and vanilla. In a separate bowl, combine flour, salt and baking soda. Slowly add the dry mixture to the wet mixture, using the lowest speed on your mixer. </div>

Place parchment paper in a 9x13 pan and spread mixture evenly over pan. Bake in a 375 degree oven for 25-35 minutes, removing when the center sets. </div>

Can I be honest? When I make dessert to serve at a party, my first thought is always on presentation. I like to serve easily displayed, easily grabbed, easily eaten desserts. So, when I made this cookie bar, I cut them up BEFORE icing them. Radical, I know.</div>

<li style="color: #575351; list-style-position: inside; list-style-type: decimal; margin: 0px; padding: 0px;">Working four pieces at a time, dip four pieces in the butter/vanilla mixture, coating completely. Using a fork, remove from the butter mixture and coat thoroughly in the cake mix mixture. Place four coated pieces into each muffin tin. Repeat until all eight tins are full.</li>
<li style="color: #575351; list-style-position: inside; list-style-type: decimal; margin: 0px; padding: 0px;">Bake for approximately 12-15 minutes or until lightly golden and centers appear set. *Do not overbake* Allow to cool in pan for about 5 minutes before gently removing them with a butter knife (just run the knife along the edge of the cavity to gently pop them out).</li>

<b>Ingredients:</b><br />

1 1/2 cups butter, softened<br />
<br />
3/4 cups of your favorite peanut butter<br />
<br />
1 cup sugar<br />
<br />
1/4 cup corn syrup<br />
<br />
2 eggs<br />
<br />
1 3/4 cups flour<br />

1 tsp. salt<br />

<b>Frosting:</b><br />

1/4 cup melted butter or margarine<br />
<br />
1/2 cup cocoa<br />
<br />
1/4 tsp. salt<br />
<br />
1/3 cup milk<br />

2 tsp. vanilla<br />

3 1/2 cups powdered sugar<br />

Cream butter and peanut butter. Then add sugar, eggs, corn syrup. Add flour and salt, and mix for about five minutes. Lightly grease a jellyroll pan, and spread mixture into pan. Bake at 350 for 20-25 minutes or until edges are just beginning to brown.</div>

These cookies are like a little piece of springtime heaven. I originally tried them using orange zest, but since I'm a big fan of anything citrus, I decided to try them using lime or lemon instead of the orange. Fabulous! They are delicious anyway you make them. I think serving them in a trio would be really fun--great for a baby shower or other party. <br />

<span style="font-size: 180%;"> <span style="font-weight: bold;">{Citrus White Chocolate Cookies}</span></span><br />

1 c. butter<br />
½ c. white sugar<br />
½ c. brown sugar<br />
1 egg<br />
2 ¼ c. flour<br />
¾ tsp. baking soda<br />
½ tsp. salt<br />
2 T. grated orange peel (about 2 large oranges)<br />
1 ½-2 c. white chocolate chips<br />
<br />
Mix butter and sugar until creamy. Beat in egg. Add the rest of the dry ingredients and mix. When you get a dough consistency, mix in the orange peel and chocolate by hand. {You can substitute lemon peel or lime peel instead of the orange for a fun variation.} Bake 10-12 minutes at 350 degrees. Cool on a wire rack. Makes approx. 40 small cookies or 20 large cookies.<br />

Preheat the oven to 350 degrees.</div>
<div style="text-align: center;">
Mix the meatball ingredients well and shape into 1- 1 1/2 inch balls.</div>

I use a 1 Tablespoon cookie scoop.</div>

For the sauce, mix all the ingredients together in a pot and heat it until it boils.</div>

Pour a 1/4 cup of sauce in the bottom of a 9x13 baking dish, and spread around.</div>

Place the meatballs in rows, then pour the rest of the sauce on top.</div>

Bake uncovered for 45-60 minutes.</div>

We live in sunny Arizona where summer is just about in full swing and ice cream/popsicles are already stocked in the freezer... something our kids look forward to. When <i>we</i> were kids, we loved going to Dairy Queen and cooling down with hand-dipped dilly bars. </div>

When I spied some cherry chips at the supermarket, I began dreaming of the DQ worker plunging my vanilla ice cream into the cherry topping and thought, "Hmm, I could replicate that." Since I already had chocolate chips at home, I snagged a bag of butterscotch chips and skipped away... dilly bars come in 3 flavors you know: <span class="Apple-style-span" style="color: #cc0000;">cherry</span>, <span class="Apple-style-span" style="color: #b45f06;">butterscotch</span> & the classic <span class="Apple-style-span" style="color: #783f04;">chocolate</span>.<br />

1. Spoon ice cream into pie pan and let harden.</div>
<div align="center">
Wait 1 hour or until ice cream is firm.</div>
<div align="center">
2. Once ice cream is hard, use round cutter* and insert tongue depressor.<br />
*Or something similar; thank you Pampered Chef measuring cup!</div>

More waiting... about 30 mins.</div>

3. Separate chips into bowls.<br />
4. Melt chips, {put in microwave for 30 seconds, stir, repeat until it's smooth.}</div>
<div align="center">
5. Insert tongue depressor into ice cream & spread a thin layer of melted chips on wax paper and put the ice cream bar on top. <br />
6. Work fast and simply pour the melted chips on the bar until it's covered and <strike>rush frantically</strike> place the bars back into the freezer. If you want to add the classic dilly bar swirl, now's the time to do it- just take a spoonful of the melted chips and pour into a swirl shape. Easy peasy!<br />

Easter Sunday was huge in my home this year. It was the first Sunday in a month that I got the privilege and opportunity to sit down with my handsome husband at the dinner table. I got to hear his jokes and witty comments and see him in a much healthier state than I had seen him. It was wonderful. Because my husband can't travel much or go many places because of his health, my family came up to visit us. I was in charge of the main course, a side dish, and dessert. This dinner, my husband marked down as a "hubby favorite", and believe me it was DELICIOUS!- and to him I am sure it was super phenomenal because he had been living on hospital food for a few weeks :) My mom couldn't stop raving about how much she loved this meal because it is her favorite thing to order at Outback Steakhouse, and now she could make it at home! Try it out! You are going to love it!</div>

These have been such lifesavers to us as my life has been pretty busy being a mom to two children and a wife to my sweet husband who still has numbness, weakness and tiredness. I LOVE freezer meals. Make ahead and save for later. They are great to have on hand after having a baby, coming back from trips, for days you don't feel like being in the kitchen or just being prepared in case and emergency situation like ours comes up.</div>

Today I am sharing a super yummy snack recipe. (OK, maybe it falls more into the treat category.) Either way, it is delicious! Whenever I take it to potlucks or neighborhood parties, I come home with an empty bowl. It is also a hit with teenagers. My 17yo took it to a party and said all his friends raved about it.<br />

1/2 cup butter<br />
1/4 cup corn syrup<br />

1 box Rice Chex or Corn Chex<br />

Pour cereal into a very large mixing bowl and set aside. Combine brown sugar, cinnamon, butter, and corn syrup in a saucepan. Bring to a boil, stirring constantly. Remove from heat and stir in soda and vanilla. Pour over cereal and stir lightly till all pieces are coated. Spread onto a greased cookie sheet with sides. Mine is 15x10". Bake at 250° for about 30 minutes, stirring every 10 minutes. Pour onto waxed paper to cool. Melt white chips in a glass bowl in the microwave at 50% power, stirring every 30 seconds. Drizzle over cooled Chex mix.</div>

<li>2 TB sugar</li>
<li>Spring Mix Salad</li>
<li>2 sliced kiwis</li>
<li>1 cup of cut strawberries</li>
<li>1/2 cup of raspberries</li>
<li>1/2 cup of chopped celery</li>
<li>1 avocado sliced</li>
<li>1 pear sliced</li>
<li>zest of orange or mandarin oranges</li>
</ul>
<strong>Dressing:</strong><br />

<li>2/3 cup olive oil</li>
<li>4 TB sugar</li>
<li>zest and juice of 1 large orange</li>
<li>zest and juice of 1 lime</li>
</ul>
<strong>Directions:</strong><br />

<li>Caramelize nuts by mixing with sugar in small skillet over low heat. Stir for about 5 minutes or until the sugar melts.</li>
<li>Combine dressing ingredients in a mason jar and shake well.</li>
<li>Toss salad ingredients together with the nuts. Add dressing to coat and serve.</li>

Instructions:</div>

<li>Proof the yeast by combining the warm water, 1 tsp sugar, 1/2 tsp AP flour, and 1 tbsp. dry yeast in a small bowl. Let it sit for about 5 minutes, until foamy.</li>
<li>Microwave the milk for about 90 seconds. Pour milk into the bowl of a stand mixer.</li>
<li>Add the sugar, salt, eggs, and butter into the bowl and mix with paddle attachment.</li>
<li>Gradually add in the flour until dough is pulling from the sides of the bowl.</li>
<li>Divide the dough evenly into two balls and place each in a well greased bowl. Cover and let rise until doubled, about an hour and a half.</li>
<li>Meanwhile, prep a work area by clearing your kitchen table and cover it with a clean fitted sheet. Lightly flour the surface.</li>

I first want to update everyone and thank you all for your prayers. We were able to come home from the hospital last Thursday and it is SO GOOD to be back! For those of you that don't know, my husband came down with Guillain Barre Syndrome (GBS), had to be life flighted from our local hospital to a better suited hospital for his needs. In the midst of suffering with heart rate and breathing issues from the GBS, his spleen spontaneously ruptured (no known cause). He had emergency surgery to remove his spleen upon which the found 6 liters of blood pooled into my husband's abdomen. He also had to be put on a ventilator. After many miracles, my husband recovered quickly and physical therapy said we had the okay to head home :) He still has numbness and tingling in his feet, but is a WALKING miracle. The doctors told us they have never seen a GBS patient leave as quickly as my husband had, having gone through all he went through. Thank you all so much for your prayers and thoughts. I truly believe that all the prayers that went his direction was a huge factor in the miracles that have happened and why we are now home.</div>

Now, we can talk about this amazing dinner! My husband asked me to deem this recipe as a "Hubby Favorite" on the blog, so here it is. This meal is absolutely incredible and one we all gobbled up! We love Chinese food, and I always feel a little bit better eating it when it is homemade and I know the ingredients that go into it. The best part about this recipe... It is done in the Crock Pot! That is right! Put it in and let it cook all day and then serve it up when dinner time rolls around! Doesn't get much more perfect than that!</div>

<li>1 lb. boneless beef chuck roast, sliced into thin strips</li>
<li>1 cup beef consomme</li>
<li>1/2 cup soy sauce</li>
<li>1/3 cup brown sugar</li>
<li>1 Tbsp. sesame oil</li>
<li>3 garlic cloves, minced</li>
<li>2 Tbsp. cornstarch</li>
<li>2 Tbsp. water</li>
<li>Fresh broccoli florets (as many as desired)</li>
<li>Hot cooked rice</li>
</ul>

Place beef in crock pot.</div>

In a small bowl, combine consomme, soy sauce, brown sugar, oil and garlic. Pour over beef.</div>

Cover and cook on LOW for 6-8 hours.</div>

In a cup, stir cornstarch and water until smooth. Add to crock pot. Stir well to combine.</div>

Blanch broccoli florets and add to the crock pot. Stir to combine.</div>

Cover and cook for an additional 20 minutes on HIGH or until thickened.</div>

Serve over hot, cooked rice.</div>

I don't know about what goes on or if/how you celebrate this amazing holiday in your house but Easter is one of my favorite holidays because it is a time that helps me focus and reflect on the life of our Savior Jesus Christ and all he sacrificed for us. Through this trial that my family has been going through the last month, we have relied heavily upon our Savior to help comfort, bless and guide us through these hard times. With summer coming quicker than we're probably all ready for (especially here in Phoenix), its about time to think about a fresher, cooler dessert to share. When it's over 100 degrees outside, serving something heavy and hot is just not ideal. I love the idea of strawberry shortcake, but I wanted to add my own little twist to it. How about a mini version? Sold!</div>

I started making my Mini Strawberry Shortcakes by following the directions on the back of the cake mix. Because I chose the white mix, the recipe called for egg whites instead of whole eggs. I used egg whites from a carton because I had them on hand, but you could easily use regular egg whites instead. In fact, that's what I'll do next time. I like to start by adding all of my wet ingredients together first when using a mix; I just think it helps everything mix together better. I could be wrong, but it's just my opinion. Once everything was mixed well, I separated the batter into two 9 inch round pans.</div>

Bake according to the directions. I always bake any recipe for the lowest required amount of time. I find that things always end up more moist this way. Another hint: try not to tip your pans as you put them in the oven. It can cause your cakes to rise unevenly.</div>

As soon as the cakes come out of the oven, run a butter knife around the edges of the pans to release the cake. Let your cakes cool between 20-25 minutes until you can touch them without pot holders or getting burned.</div>

Now comes the fun part: trying to get your cake cleanly out of the pans. I've attempted this many times so I'd like to think that I've gotten it nailed down to a pretty good science by now. I'm sure someone out there has a much easier solution, but this is just what works for me. I start by placing a solid, flat plate on top of the pan (avoid flimsy or paper plates).</div>

Now carefully flip the plate/pan combo over and give the duo a slight shake until you feel the cake release completely from the pan.</div>

Slowly lift the pan and voila! Nice, clean round cake still in one piece. Once I've got the cake out, I wrap the plate tightly with plastic wrap and refrigerate it until I'm ready to decorate it.</div>

And now comes the fun part: the stacking and the decorating! Because my cakes were baked in 9 inch rounds, I was able to use a 3 inch round cookie cutter to cut my mini cakes out. If you use the same sizes, you should be able to fit four circles on a single cake.</div>

Take one of the 3 inch circles and smooth a thin layer of whipped cream on it. Now spread thin slices of strawberries on the whipped cream and then add another thin layer of whipped cream. Top off the filling of the cake with white chocolate chips. I know that the typical strawberry shortcake doesn't call for any kind of chocolate, but I have a really hard time not adding some form of chocolate to a dessert. Chocolate never hurt anyone. ;)</div>

Now comes the really fun part: heap lots and lots of whipped cream onto the top of your stacked cakes. Like, enough so that it starts to fall off the sides. Using a butter knife, start spreading the whipped cream off the top and down the sides of your cake. Spread the whipped cream around the outside edges of the cake, rotating your plate as you go. Wipe off excess whipped cream as you go. I just found its easier to have too much to start with rather than not enough.</div>
